National Chocolate Chips Cookie Day!

August 4, 2020 is the National Chocolate Chips Cookie Day, yes this is a late post =) but nonetheless I decided to post this, this is my favorite baked goodies. I started baking because of Chocolate Chips Cookies for my kids and then I level up to cupcakes and so on and on.

A brief background on Chocolate Chips Cookie recipe, back in 1930s the genius behind this recipe Ruth Graves Wakefield who owned the TollHouse Inn (the one that you see on the chocolate packaging), run out of baker's chocolate and she use semi-sweet chocolate chips that is laying around the corner and Viola! a new recipe that so heaven came to life. A cold milk plus a warm Chocolate Chips Cookie perfect to end the long day from work, from school, or while watching your favorite TV series =).

Another trivia, Chocolate Chips Cookie is America's #1 favorite Cookie, And they celebrate National Chocolate Chips Cookie by giving free cookies or bakeries offer it in a much cheaper price. I wish we also celebrate it here in the Philippines (for the free cookies). Although we are also Cookie lovers, if you check Instagram or Facebook you will see a lot of cookie bar or  sellers that offers different flavors of cookies.

I like my Chocolate Chips Cookie crispy outside and chewy inside, and my go to recipe is from Anna Olson Classic Chocolate Chips Cookies. She shares two techniques adding Cornstrach that will give moisture and will ensure it will stay soft at the center,  and second is you need to chill the dough for atleast 1 hour to have a uniformed size cookies and it will not spread to much when baking. You can freeze some so that everytime you crave you can just pop them on your oven. Thaw them for atleast 15 mins before baking.

What is chocolate chips cookies without a good chocolate chips? And top of my list as of the moment is the Callebaut Milk Callets, the finest Belgian Chocolate. They are the best! I tried different Chocolate Chips but I still go back to this one. This chocolate chips is a game changer for me ;-) don't take my word for it, try it!

Here's the recipe:

1 cup unsalted butter, at room temperature

1 cup packed brown sugar

1 cup white sugar

2 large egg, at room temperature

2 tsp vanilla extract

2 1/2 cup all-purpose flour

2 Tbsp cornstarch

1 tsp baking soda

1 tsp salt

3 cups chocolate chips

1. Cream the unsalted butter, brown sugar, and white sugar. Then beat the eggs one at a time and add Vanilla extract.

 2. In a seperate bowl sift the all-purpose flour, cornstarch, salt and baking soda. Set aside 1 tsp of flour and add it to the chocolate chips, this is to avoid the chocolate chips from sinking into the batter.

3. Add the dry ingredients to the batter at slow speed if you are using stand mixer and add chocolate chips until well blended.

4. Use ice scream scooper to scoop the cookie dough and arrange it to the baking tray. Chill for atleast 1 hour.

5. Pre-heat your oven at 325ΒΊF and arrange the cookies in a baking tray lined with parchment paper, make sure there is a gap between cookies because they will spread.  Bake them for 15 to 18 mins. or until you see the edges turns brown.

Serve it slightly cool with a cold milk and ENJOY! =)
